1. Preheat the oven to 450ºF. In a large oven safe baking sheet arrange the vegetables. Toss the vegetables with 1 tablespoon olive oil, ¼ cup Summer Fresh Cranberry Madeira sauce, and salt and pepper.
2. Arrange turkey breast on top of vegetables. Season with salt and pepper and drizzle with remaining olive oil. Place baking dish in the centre of the oven and roast for 10 minutes, reduce heat to 350F and continue to roast for 35 minutes until is fully cooked.
3. Transfer breast to a cutting board and tent with foil for 10 minutes. Continue to roast vegetables for 10 minutes more. Meanwhile, heat the remaining sauce in a small pot over low heat.
4. Slice turkey breast and serve alongside veggies and warm Summer Fresh Cranberry Madeira Sauce.
