Roast Turkey with Cranberry Madiera Sauce

2 tablespoon extra virgin olive oil

3 pound boneless turkey breast

1 onion, cut into wedges

1 cup green beans, trimmed

20 red and white skinned new potatoes, halved

1/2 cup Summer Fresh Cranberry Madeira Sauce, divided

salt and pepper

1. Preheat the oven to 450F. In a large oven safe baking sheet arrange the vegetables. Toss the vegetables with 1 tablespoon olive oil, cup Summer Fresh Cranberry Madeira sauce, and salt and pepper.

2. Arrange turkey breast on top of vegetables. Season with salt and pepper and drizzle with remaining olive oil. Place baking dish in the centre of the oven and roast for 10 minutes, reduce heat to 350F and continue to roast for 35 minutes until is fully cooked.

3. Transfer breast to a cutting board and tent with foil for 10 minutes. Continue to roast vegetables for 10 minutes more. Meanwhile, heat the remaining sauce in a small pot over low heat.

4. Slice turkey breast and serve alongside veggies and warm Summer Fresh Cranberry Madeira Sauce.
