Grilled Cranberry Madeira Lambchops

8 frenched lamb chops

2 tablespoons finely chopped mint

2 tablespoons finely chopped parsley

2 tablespoons finely chopped walnuts

1 tablespoon Dijon mustard

1 garlic clove, minced

1 tablespoon balsamic vinegar

2 tablespoons extra virgin olive oil

1/2 cup Summer Fresh Cranberry Madeira Sauce, heated

salt and pepper

1. In a small bowl combine mint, parsley, walnuts, garlic, Dijon, balsamic and oil. Season the rub generously with salt and pepper. Spoon the rub onto both sides of the lamb chops.

2. Meanwhile, preheat a lightly oiled grill to medium high heat. Arrange the lamb chops in a single layer on the grill. Grill for 4 minutes a side, 8 minutes total until cooked to medium.

3. Let chops rest for 10 minutes before serving. Drizzle with warm Summer Fresh Cranberry Madeira Sauce..
